Shio Koji Hot Pot Could be the Next Big Hit in the US, Move Aside Tonkotsu Ramen!
Japanese hot pot is one of my favorite dishes, especially on a cold day. My husband seems to like pretty much any of my hot pot creations, but Shio Koji hot pot is one of my favorites. Mostly because of the taste, but also because of the health benefits of the Japanese ingredient, Shio Koji, which gives it that amazing umami taste.
During winter, or really anytime the weather gets cold, I’m always thinking to make Shio Koji hot pot. I love the mix of the vibrant colors in this dish, don’t you? When using high-quality and rich-tasting organic vegetables, there is really no better dish. From an appearance, taste, and health benefit. I can even get my kids to eat the vegetables sometimes.
